Ingredients:

  • 4 large bell peppers (any color you prefer)
  • 1/2 pound lean ground turkey or chicken
  • 1 cup cooked quinoa (or brown rice for a different option)
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (frozen, canned, or fresh)
  • 1/2 cup diced onion
  • 1/2 cup diced zucchini
  • 1/2 cup diced mushrooms
  • 1 teaspoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup low-fat shredded cheese (optional) Instructions:

Preheat your oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds and membranes. You can also slice a small amount off the bottoms if needed to help them stand upright. Rinse the peppers and set them aside.

In a large skillet, heat the olive oil over medium heat. Add diced onions and cook for 2-3 minutes until they become translucent.

Add the ground turkey or chicken to the skillet and cook, breaking it apart with a spoon, until it's browned and cooked through. Drain any excess fat.

Stir in the diced zucchini, mushrooms, and diced tomatoes. Cook for another 2-3 minutes until the vegetables begin to soften.

Add cooked quinoa (or brown rice), black beans, corn, chili powder, cumin, paprika, salt, and pepper to the skillet. Mix everything well and cook for an additional 2-3 minutes until all the ingredients are heated through and well combined.

Stuff each of the bell peppers with the mixture, pressing it down gently as you go. If desired, top each pepper with a sprinkle of low-fat shredded cheese.

Place the stuffed peppers in a baking dish, and cover the dish with foil.

Bake in the preheated oven for about 25-30 minutes or until the peppers are tender. Remove the foil and bake for an additional 5-10 minutes, or until the cheese (if added) is melted and bubbly, and the peppers are slightly browned.

Carefully remove the stuffed peppers from the oven, let them cool for a few minutes, and serve.
