Delicious Mediterranean salad

Ingredients:

For the Salad:

  • 2 cups of mixed greens (e.g., romaine lettuce, spinach, arugula)
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup of Kalamata olives, pitted and sliced
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of fresh mint leaves, chopped (optional) For the Dressing:
  • 1/4 cup of extra-virgin olive oil
  • 2 tablespoons of red wine vinegar
  • 1 clove of garlic, minced
  • 1 teaspoon of dried oregano
  • Salt and black pepper to taste Instructions:

Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper. Set the dressing aside to allow the flavors to meld.

Prepare the Salad Base: Wash and chop the mixed greens, cherry tomatoes, cucumber, red bell pepper, and red onion. Place them in a large salad bowl.

Add Kalamata Olives and Feta: Slice the Kalamata olives and crumble the feta cheese. Add them to the salad bowl.

Fresh Herbs (Optional): If you're using fresh mint leaves, chop them finely, and add them to the salad. Fresh mint adds a refreshing touch to the salad.

Toss the Salad: Drizzle the dressing over the salad ingredients in the bowl. Use salad tongs or two large spoons to gently toss everything together, ensuring that

the dressing is evenly distributed.

Garnish with Parsley: Sprinkle the freshly chopped parsley over the top of the salad for a burst of fresh flavor and color.

Serve: Transfer the Mediterranean salad to serving plates or a large platter. It's ready to serve as a refreshing and healthy appetizer or side dish.
